Grilled Tuna with Piperade Sauce Recipe

Ingredients:
2 pounds Tuna Loin
1 T garlic
1 T chopped parsley, chopped
1 T tarragon, chopped (optional)
2 oz olive oil
Salt & Pepper
Piperade Sauce :
- 2 oz olive oil
- 1 T. garlic chopped
- 1 sliced onion
- 2 tomatoes, chopped
- 1 red pepper, sliced
- 1 green pepper, sliced
- 1 C. white wine
- 30 olives pitted and chopped
- 1 T chopped parsley
- 1 t thyme
- 1 t oregano
- Salt & Pepper
Preparation:
- Cut 6 5-oz Tuna steaks.
- Marinated with garlic herbs and oil.
- For the sauce heat a medium sized heavy pot, add oil, garlic, onion, tomatoes, peppers and cook.
- Add white wine and simmer.
- Add herbs, olives and salt and pepper. Hold sauce hot.
- Season the Tuna with salt and pepper and grill over high heat for 2 minutes on each side.
- Spoon Piperade Sauce over Tuna.
- Serve with Rice and your choice of simple vegetable
