Poached Salmon with White Wine Dill Sauce Recipe
Servings: 4
Ingredients:
- 1 t ground white pepper .
- 1 t fresh dill or ½ t dried dill .
- 1 T lemon juice .
- 1/16 t cayenne .
- 1 1/2 lbs fresh salmon fillets .
- 2 tsps flour .
- 1 tsp butter
- 1 1/2 c white wine .
- 1 pinch salt
Preparation:
- Preheat oven to 250 F.
- Cut salmon fillets into 4 pieces.
- In a large saucepan, bring white wine to a light simmer.
- Place fillets in saucepan; cover.
- Poach 12 minutes, or until the inner flesh has turned light pink.
- Remove salmon with slotted spatula, cover, & place in oven.
- Combine hot poaching liquid in blender with remaining ingredients.
- Cover with towel and puree for 1 min.
- Return to saucepan & whisk until thickened.
- Serve poached salmon fillets with dill sauce spooned on top.
