A round, 3 to 3 ½ inch medium choice, farm-raised in Prince Edward Island. The consistent size and well-formed cups define this oyster. Natural spat is caught and raised in a hatchery until they are 2 years old. At this point the oysters are spread on the bottom of Lennox Island Channel which is a tributary of Malpeque Bay and allowed to grow free until they reach market size.
