Crawfish Etouffee Recipe
Servings: 4
Ingredients:
- 1 1/4 stick butter
- 1 medium onion, diced
- 2 stalks celery, diced
- 1 small bell pepper, diced
- 1 lb peeled crawfish tails
- Flat leaf parsley, chopped
- Scallions, chopped
- ½ t salt
- ½ t cayenne pepper
- ¼ t oregano
- ¼ t paprika
- ½ t black pepper
- ¼ t white pepper
Preparation:
- Melt butter or margarine.
- Add diced onions, celery, and bell pepper.
- Saute' on medium heat until vegetables are translucent . Approximately 15 minutes.
- Add crawfish and seasonings - stir well.
- Cook covered on low heat for approximately 15 minutes.
- Add chopped parsley and green onions just before serving.
