Lobster Thermidor Recipe:


  • 4 -1 ½ pound Live Lobster
  • All-purpose flour
  • 1 C Drawn butter
  • Salt, white pepper, and garlic to taste
  • 1/3 C Minced shallots
  • 1 C Lobster broth
  • ¼ C dry sherry
  • ¼ C white wine
  • 1 ½ -2 C cream
  • 1-1/3 T Dijon mustard
  • 1/3 C Parmesan cheese, grated
  • 3 T paprika
  • 4 T parsley, minced


  1. Cut lobster meat into chunks.
  2. Dust lobster in flour. Heat half of butter in a skillet on medium. Lightly brown the meat and set aside.
  3. Sauté scallops until tender. Add lobster and cook several minutes, frequently stirring.
  4. Add broth, sherry, and wine, reduce the liquid, and add cream. Cook until thickened, add the next four ingredients and continue cooking for several minutes.
  5. Place split lobster tails on a sheet pan, cavity sides up. Divide Thermidor between shells. Add melted butter, parmesan, paprika, and parsley. Broil until lightly browned.
